Why this matters

public schools largest restaurant chain

Public schools are the largest restaurant chain in America  — with more locations than McDonald’s, Starbucks, and Subway combined.

They serve 30 million kids, over 7.5 billion meals a year. And what goes into those meals determines whether a child can focus and show up ready to learn.

As school districts across the country face growing pressure to improve student health and reverse a generational decline in academic performance, this study changes the conversation:

The cafeteria is not separate from the classroom. It is a classroom.

“This research proves what so many of us have known for years: school food is the solution, not the problem.”

— José Andrés, Chef and Founder, World Central Kitchen

The solution exists.
We just need to scale it.

About the Study

The study compared 49 Eat Real Certified schools against nearly 2,500 non-certified control schools in California, using a staggered difference-in-differences methodology — the same approach used to evaluate major public policy interventions. That means researchers isolated the effect of Eat Real certification specifically, controlling for other variables.

Real Food Education

What we eat doesn’t just affect our physical health. It can affect how we feel, how we think, how we focus, and how we learn. And for children, who are growing, developing and learning every day, the food we give them really matters. This study is a beautiful reminder that nutrition and learning are deeply connected.

— Jessie Inchauspé,
Biochemist and bestselling author, Founder of Glucose Goddess

I’ve traveled the world studying how food shapes culture, health, and community. This study should be a wake-up call for every policymaker, health advocate, and school district in America. What we feed kids at school determines who they become.

— Andrew Zimmern,
Chef, food advocate, television host, Eat Real Chefs for Kids Council member

In my kitchen, ingredients matter. In a classroom, they matter just as much. This research confirms what school food professionals have been asking people to take seriously for years: you cannot separate what a child eats from how a child learns.

— Marcella Villanueva,
Chef and school food advocate, Eat Real Chefs for Kids Council member

Performance starts long before race day, with the nutrition we use to fuel our bodies. School is where kids train for their futures. This study shows that what they eat while they’re there isn’t a small detail. It’s foundational.

— Colleen Quigley,
Olympic middle distance runner, track and field

Food is the most powerful medicine we have, and the most powerful teacher. When we feed children real food in schools, we are not just nourishing their bodies. We are telling them they matter. This research proves what so many of us have known for years: school food is the solution, not the problem.

Chef, humanitarian, founder of World Central Kitchen
